Milk applications-Acids

  • Fresh Milk
            * Confirms freshness
            * Fresh milk should contain no Lactic Acid (No more than 30 ppm)

  • Fermented Products
            * Determines taste and aroma
            * Process control in yogurt
            * Both L- and D- Lactic acid are present in milk, but always in the same
               proportion 1:1
            * So, L-Lactic acid alone serves as an indicator for both forms.
